About this dish
In Indonesia, "martabak" refers to two distinct dishes. Martabak manis is a thick sweet folded pancake based on apam balik, layered with chocolate, cheese, or sugar. Martabak telur is a pan-fried crepe folded around beaten egg, chopped leeks or scallions, and minced meat, then cut into squares and eaten with curry, pickles, or chilli sauce; it is the closer Indonesian relative of murtabak. The name "murtabak" comes from the Arabic mutabbaq, meaning "folded", and the dish is shared across the Arabian Peninsula, the Indian subcontinent, and Maritime Southeast Asia. A thinner, drier variant of martabak manis is called martabak tipis kering.
