About this dish
Bubur ayam is the Indonesian and Malay name for chicken congee: rice porridge with shredded chicken, served with condiments including chopped scallion, crispy fried shallot, celery, preserved vegetables (tongcay or chai poh), fried soybean, crullers (youtiao, locally called cakwe), salty and sweet soy sauce, and sometimes a yellow chicken broth poured over the top, with kerupuk (Indonesian crackers) on the side. Unlike many Indonesian dishes, the porridge itself is not spicy; sambal is served separately for those who want heat. It is sold from travelling carts in residential streets in the morning, from warung, from fast-food chains, and from five-star hotel restaurants.
